Heavenly Chocolate Cupcakes


My sister, who’s traveling on business in Phoenix (umm…warm and sunny much?), texted me the yesterday: How’s life in the tundra?

It’s downright frigid here in the New York area this week.  Waking up to Matt Lauer reminding me that it’s 8 degrees is not uplifting.  What’s a girl to do, then, when the kids are home for a snow day and outdoor activities would be uncomfortable at best and painful at worst?

You’re so smart.  Bake!  Of course!  Bake, bake, bake…

I made these Chocolate Mayonnaise Cupcakes.  The recipe is in my Baked Elements cookbook (although the link I added is actually the same recipe only it’s on food52.com).  The recipes all sound scrumptious but I really bought it because I enjoy the authors, Matt Lewis and Renato Poliafito.  They sound like funny guys.  The food styling sucked me in, too.

Hope you enjoy these cupcakes.  They actually have even more flavor the next day and the recipe makes more than a dozen with plenty of frosting to go around.  I had one for breakfast today. Well, second breakfast.  First I had a normal breakfast then I accidentally eyed the leftover cupcakes and they were kind of waving at me.  And smiling.  It would’ve been rude not to acknowledge them.
